
This easy and delicious Lazy Pie recipe was taught to us by the charming Kalogris family when we visited their estate winery in the Peloponnese region of Greece. It was created long ago by farmers as a way to create a hearty meal out of whatever they had on hand. If you’re a stickler for precise quantities you may have a bit of an issue with this recipe as it’s pretty loosey goosey…just the way I like to cook!
Lazy Pie

Mix the flour, eggs and milk first and then add the warm water a little at a time until about the consistency of thick pancake batter. It doesn’t have to be perfectly smooth, a few lumps are fine.
23 tablespoons of flour
4 eggs
500 ml milk
Warm water

Crumble a block of feta cheese or any other cheese you prefer into the batter. 1 to 2 cups is good.

Dice a combination of whatever ingredients you prefer such as meat, vegetables and herbs. Saute any uncooked meat and also the vegetables if desired.

In a large deep dish pizza pan or baking pan heat in the oven a few tablespoons of olive oil. Enough to coat the bottom of the pan.

Pour half the batter into the pan with the hot oil.

Sprinkle liberally with whatever mixture of diced ingredients you like. We used bacon, onions, peppers, tomatoes and fresh herbs.

Pour in the remaining batter and top with a few chunks of butter and more diced bacon if using.

Bake at 350 for about 20 minutes or until golden brown.
